Что такое куркума?

Желтый имбирь или сестра имбиря, как её ласково называют. Это растение семейства имбирных, родом из Юго-Восточной Индии. Стебли и корневища используются как пряность.

Виды куркумы

Существует свыше 40 разновидностей этого растения, но в кулинарии и пищевой промышленности используются лишь четыре:

★Куркума домашняя (длинная), или турмерик – самая известная пряность родом с Востока. Также популярна в Америке и в Англии.

★Куркума круглая используется для изготовления куркумового крахмала.

★Куркума цедоария. Имеет горький и жгучий вкус. В виде маленьких кусочков применяется для производства ликеров.

★Куркума ароматная применяется в кулинарии.

Качество свежей и молотой куркумы

➊Корень растения нужно выбирать плотный, достаточно упругий, не мягкий и без внешних повреждений.

➋Интенсивность оттенка зависит от сорта и места произрастания корня, желтый цвет дает пигмент куркумин. Данного пигмента больше в домашней культуре, чем в дикорастущей.

➌Немаловажен запах. Корень можно слегка сковырнуть ногтем, а порошок потереть кончиками пальцев. Свежая куркума при растирании будет пахнуть достаточно ярко. Если запах слабый или отсутствует – продукт старый и в пищу не годится.

➍Порошок куркумы следует выбирать без комочков, рассыпчатый. Упаковка должна быть герметичной.

Состав куркумы

Содержит микродозы витаминов К, В, В1, В3, В2, С и микроэлементы: кальций, железо, фосфор и йод.

Эфирные масла, которые оказывают исцеляющее действие

Самый главный элемент - это куркумин. Именно он придает желтый цвет.

Из куркумина делают пищевую добавку Е100 (турмерик),

которая очень часто используется для производства майонеза, сыров, сливочного масла, маргарина и йогурта. Турмерик придает продуктам красивый желтый оттенок.

Можно ли похудеть на куркуме?

Пока научно не доказано,но установлено, куркума способна предотвратить возобновление роста жировых клеток после сбрасывания веса

Исследования, опубликованные в 2009 году университетом Тафтса, говорят о том, что в растущей жировой ткани образуются новые кровеносные сосуды. За счет этого и увеличивается вес. Исследования на животных показали, что введение куркумина в жировые клетки останавливает рост новых кровеносных сосудов, и жировая ткань не разрастается. В результате происходит снижение веса.

Простой рецепт риса с куркумой и чесноком

Рис - 200 г
Вода - 500 мл
Куркума - 1 ч. л.
Чеснок - 3 зубчика
Соль - по вкусу
Сливочное масло - 40 г
Зелень - по желанию

Высыпать рис в кастрюлю, добавить холодную воду, куркуму, соль.
Когда вода закипит, уменьшить огонь, закрыть крышкой и варить 20 минут.
Порубить чеснок и зелень, перемешать с рисом. Приятного аппетита!

Противопоказания к применению

Куркума оказывает довольно сильное воздействие на организм, не рекомендуется употреблять при:
▶ Хронических заболеваниях;
▶ Желчекаменной болезни;
▶ забитых желчевыводящих путей;
▶ на первых месяцах беременности;
▶ приём диабетических препаратов;
▶ приём антикоагулянтов - препаратов, разжижающих кровь

Не рекомендуется детям до 2-х лет!

Дозировка

Куркумой не стоит злоупотреблять. Допустимое использование при готовке:

2-3 грамма пряности на 5-6 порций
или 1/2 чайной ложки на 1,5-2 кг пищи
